SWEET POTATO SAUSAGE CASSEROLE 
1 lb. lean ground sausage
1 1/2 c. thinly sliced apples
1/4 c. packed brown sugar
1/2 c. milk
1/4 tsp. salt
2 c. cooked, mashed sweet potatoes

Press sausage in the bottom of a 2 quart casserole dish. Arrange apple slices atop sausage. Sprinkle with brown sugar. Add milk and salt to mashed sweet potatoes and beat until light and fluffy. Cover apple slices with sweet potato mixture and bake for 1 hour at 350 degrees. Serve very hot. Serves 6.
