STRAWBERRY ROLL CAKE | |
3/4 c. sugar 3/4 c. plain flour 3/4 tsp. baking powder 1/4 tsp. salt 4 eggs 1 tsp. vanilla 1 pt. strawberries 1/2 c. sugar Sift together flour, sugar, baking powder, and salt. Separate eggs. Add egg yolks, milk, and vanilla to dry mixture. Beat egg whites until fluffy. Fold into cake batter. Preheat oven to 350 degrees. Pour batter into greased and floured 11x13 shallow baking pan. Bake at 350 for 20 minutes. Sweeten strawberries with 1/2 cup sugar. Mash with potato masher. While cake is baking, place on counter top 1 sheet of foil the size of the baking pan, with damp cloth on top of the foil. Dump cake on damp cloth. Spread strawberries on top of hot cake. Grasp corners of damp cloth and roll cake while pulling cloth over cake. After rolling cake, cover cake with damp cloth and foil. Place in refrigerator for 2 hours. Slice and serve. |
