PINEAPPLE-ZUCCHINI CAKE 
3 eggs
2 c. sugar
2 tbsp. vanilla
1 c. oil
2 c. grated zucchini
1 c. crushed pineapple, drained
3 c. flour
1 tsp. baking powder
1/2 c. raisins
1 tsp. salt
1 tsp. baking soda
1 c. chopped nuts

Beat eggs until fluffy. Add sugar, vanilla, oil, and zucchini. Beat in dry ingredients. Stir in pineapple, raisins and nuts. Mix well. Bake at 325 degrees for 1 hour. Use either 2 greased loaf pans or 1 tube pan.
