POTATO AND BACON SOUP 
4-5 medium red potatoes, cubed
6-8 pieces bacon, cut up 1-inch
3 tbsp. bacon drippings
1 medium onion, diced
1-2 garlic cloves, minced
1 (10 oz.) can cream of cheddar soup
2-3 cups water or chicken stock
chopped parsley

Brown bacon in a large skillet. Add onion and garlic. Sauté for a few of minutes. Drain off fat.

Add potatoes and 2-3 cups of water. Cover and bring to a boil. Cook on low until potatoes are tender. Add entire can of soup. Add parsley. Simmer to blend flavors and to desired thickness.

Tthis was SO good! I used Swanson chicken broth instead of water - definitely recommend that for extra flavor. My bacon wasn't super thick-cut so 6 slices were plenty. Also, a hand blender makes quick work of getting it nice and creamy if you don't want chunky soup. Thank you for sharing!
