COCONUT CUSTARD PIE 
1 unbaked pie shell (I use a Pillsbury crust)

FILLING:

2 large eggs
1 large egg, separated
3/4 cup sugar
1/4 tsp. salt
1 tsp. vanilla
1 tbsp. melted butter
3 tbsp. all-purpose flour
1 cup milk
1/2 cup coconut flakes

Preheat oven to 350°F. Prepare pie shell.

In a medium bowl beat the eggs and the egg yolk. Stir in sugar, salt, vanilla and melted butter till well combined. Stir in flour until smooth. Add milk and coconut flakes, mix well.

Beat egg white until foamy but not until peaks form. Stir into pie filling. Mixture will be slightly foamy on top. Pour mixture into prepared pie shell.

Bake at 350°F for about 45 minutes or until custard is set and slightly browned on top.
