LOW-CARB MOCK DARK CHOCOLATE PUDDING | |
4 tbsp. Extra Creamy Cool Whip (different from the original - the extra creamy is lower carb) 1/4 tsp. Hershey's Special Dark Cocoa powder (in baking aisle) a 3 finger pinch of glazed walnut pieces (near salads in store - Fresh Gourmet was brand name) Combine all ingredients and stir. It will be combined when the colors become blended instead of marbleized (the dust and cream). Then it is ready to eat. I eat mine immediately so I'm not sure if this stores well. What is created tastes like chocolate pudding to me but an adult chocolate because of the Special Dark flavor. It isn't a milk chocolate flavored pudding. The color is almost purple when mixed instead of deep brown all over. The walnuts I used did have 2g sugar per tablespoon but I do not use that many per stir. The reason I made this up was because the Jello type of pudding had too much sugar and I try to avoid artificial sweetener. Sometimes I do add more of the powder, but don't go too far or it will get bitter. The consistency is very smooth on your palate then you get a surprise walnut that you can chew occasionally.
