FINNISH FLAT BREAD (RIESKA) | |
1/4 c. quick oatmeal 1/4 c. whole wheat flour 3 c. flour 1/4 c. sugar 1 tsp. salt 3 tsp. baking soda 1/2 c. shortening 2 c. buttermilk Combine flours, oatmeal, sugar and salt in a bowl. Cut in shortening with a fork or pastry blender. Mix baking soda with buttermilk and stir into flour mixture to form a soft dough. Shape dough into two round loaves. Put loaves on greased and floured cookie sheet and flatten each loaf to about 1 inch thickness. Prick with fork to keep bubbles from forming while baking. Bake in a pre-heated 450 degree oven for 15-20 minutes until lightly browned but not crisp. |
