CYNTHIA'S EASY SALMON CAKES 
1 (15 oz.) can salmon (Chicken of the Sea brand is OK)
1 cup plain bread crumbs, divided
1 egg
1 small lemon
1 tsp. lemon-pepper seasoning (or to taste)
1 tsp. prepared horseradish (or to taste)
1 tbsp. mayonnaise (Hellmann's or Best Foods)
1/2 tsp. stone ground mustard

Drain canned salmon well. I remove the large bones and silver skin.

Place prepared salmon in large bowl then add 1/2 cup bread crumbs, well beaten egg and remaining ingredients. Form salmon into patties about 3-inches across and 1-inch thick. There will be enough mixture to make five patties. Pat each patty into remaining bread crumbs.

Meanwhile, melt 2 tablespoons butter and 1 tablespoon olive oil in fry pan. When oil is hot, gently drop patties into pan. Slow fry patties until crusty and golden brown.

SAUCE:

1/2 cup mayonnaise
2 tbsp. sweet pickle relish
1/2 tsp. hot sauce
1 tsp. lemon juice
1 tbsp. ground mustard

For a quick, easy (and tasty) sauce, mix mayonnaise, relish, hot sauce, lemon juice and ground mustard.

Spoon sauce over patties and serve!
