CRANBERRY - ORANGE NUT BREAD 
2 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt; optional
1/4 c. butter
1 c. fresh cranberries, cut in half
1/2 c. chopped nuts; optional
1 tsp. grated orange rind
3/4 c. orange juice
1 egg, beaten

Combine dry ingredients. Cut in butter until cornmeal consistency. Mix together grated orange rind, egg, and orange juice. Pour over dry mixture and stir until moistened. Fold in the cranberries and nuts. Pour into greased bread pan and bake 60 minutes at 350 degrees. (An easy way to add the orange rind is to add 1/2 teaspoon dried rind to the juice and let soak while preparing bread, adding juice and rind together.)
