DATE FILLED COOKIES 
COOKIE:

1 1/2 c. shortening
2 c. brown sugar
2 eggs
2 tsp. vanilla
4 c. flour
1 tsp. baking soda
1 tsp. cream of tartar

FILLING:

2 c. dates, cut up
1 c. water
1 c. sugar
1/2 c. chopped walnuts

For cookies: Cream together shortening, brown sugar, eggs and vanilla. Add flour, baking soda and cream of tartar. Mix well. Roll out dough and cut with a round cookie cutter.

For filling: In a saucepan, cook dates, water and sugar until thick. Cool. Stir in walnuts.

Assembly: Place 1 cookie on cookie sheet. Place 1 teaspoon of filling on top and cover with a second cookie. Prick top of cookie with a fork. Bake at 350 degrees for 12-15 minutes.
