WALNUT CAKE (TORTA DI NOCI) 
1 stick butter, softened at room temperature
2/3 c. granulated sugar
1 egg
2 tbsp. rum
Peel of 1 lemon, grated (or 1 tsp. lemon juice)
1 1/2 tsp. baking powder
1/2 lb. shelled walnut meats, chopped very fine in food processor
1 c. flour
8-9" layer cake pan or spring form pan

1. Preheat oven to 350 degrees.

2. Set aside 1 tablespoon butter for greased pan. Put rest in bowl (or food processor) and mash with a spoon until creamy.

3. Add sugar and mix thoroughly.

4. Add egg, rum, lemon peel and baking powder. Mix thoroughly.

5. Add chopped walnuts, a little at a time, incorporating them thoroughly into the mixture.

6. Add the flour, shaking it through a strainer. Mix well.

7. Grease and flour cake pan, put in batter, leveling it with a spatula.

8. Bake for 55-60 minutes.
