PASTRY WRAPPED BRIE 
10 x 9 inch sheet frozen puff pastry
2 (4 oz.) pkg. garlic and herb semi - soft cheese (rondele)
1 egg, beaten to blend
1 tbsp. water

Lightly flour baking sheet. Place puff pastry on prepared sheet and roll out gently to remove fold lines. Place brie in center of pastry. Spread 1 package of soft cheese on brie. Turn brie over and spread remaining cheese on second side. Bring pastry up around sides to wrap brie completely. Trim excess pastry. Turn over and place seam side down. Reroll scraps and cut out decorations to place on top of brie. Combine egg and water. Brush over top. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before baking.)

Preheat oven to 375 degrees. Bake pastry until golden brown, 30 to 35 minutes. Let stand 10 minutes. Serve warm. Note: Cheddar cheese can also be used in this recipe. Serve with crackers and apple slices.
