BROCCOLI WITH GARLIC AND LEMON | |
Available year-round, beautiful broccoli should be cooked to a tender crispness. When you toss it with lemon and garlic, the tempting aroma will whet your family's appetite. Serves 4. 1 1/2 lbs. fresh broccoli, cleaned and trimmed 3 tbsp. olive oil 2 tsp. minced garlic 2 tbsp. fresh lemon juice Salt and pepper to taste 1. Cut broccoli in spears and cook in a large kettle of boiling salted water for about 7 minutes or until crisp-tender. 2. While the broccoli is cooking, heat the oil in a small frying pan and saute garlic for 1 minute or until lightly golden. Do not brown. 3. Drain broccoli, transfer to a bowl and pour the garlic mixture over it. Add the remaining ingredients and toss gently until well combined; serve. |
