OATMEAL MUFFINS 
2 c. oatmeal
2 c. sour cream
2/3 c. melted butter
4 eggs
2 c. light brown sugar
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

Combine oats and sugar; cream. Stir in butter, eggs and brown sugar until well mixed. Sift together flour, baking powder, soda and salt. Stir into oatmeal mixture just until blended. Divide into 2 greased 12 cup muffin pans. Bake at 375 degrees for 20 to 25 minutes, or until muffins test done. Makes 2 dozen.
