ITALIAN-STYLE ZUCCHINI 
1 c. fresh, frozen loose-pack, or canned corn, drained
1 (7 1/2 oz.) can tomatoes, cut up, or 2 tomatoes, peeled, seeded, and chopped
1/4 tsp. Italian seasoning, crushed
Dash of onion powder
1 med. zucchini, sliced 1/4 inch thick

In a microwave-safe 1-quart casserole, combine corn, undrained tomatoes, Italian seasoning, and onion powder. Cover, cook on 100% power (high) 3 minutes. Stir in zucchini. Cook, uncovered, on high 3 to 4 minutes. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
