AUTUMN CHEESE CAKE 
1 c. graham cracker crumbs
1/2 tsp. cinnamon
3 tbsp. sugar
1/4 c. butter

(Variation: Add 1/2 cup finely chopped pecans with crumbs for crust, continue as directed).

Combine crumbs, sugar, cinnamon, butter. Press into bottom of 9 inch spring form pan. Bake at 350 degrees for 10 minutes.

2 (8 oz.) pkgs. cream cheese, softened
2 eggs
1/2 c. sugar
1/2 tsp. vanilla

Combine cream cheese and sugar, mixing at medium speed, until well blended. Add eggs, one at a time, mixing well after each addition. Blend in vanilla, pour over crust.

4 c. thin peeled apple slices
1/2 tsp. cinnamon
1/3 c. sugar
1/4 c. chopped peanuts

Toss apples with combine sugar and cinnamon. Spoon apple mixture over cream cheese layer. Sprinkle with chopped pecans.

Bake at 350 degrees for 1 hour and 10 minutes. Loosen cake from rim of pan. Cool before removing rim of pan. Chill.
