MOM'S AUTUMN SURPRISE CAKE | |
2 c. peeled, chopped apples 1 c. sugar 3/4 c. oil 1 egg, well beaten 1/2 c. flaked coconut 1 tsp. vanilla 1 1/2 c. flour 1 tsp. baking soda 1/2 tsp. salt 1/2 c. chopped nuts TOPPING INGREDIENTS: 1 c. coconut 1/2 c. brown sugar 1/3 c. evaporated milk or cream 6 tbsp. melted butter Mix 1 cup sugar and apples and let stand 30 minutes. Blend oil, egg, and vanilla into apples. Sift dry ingredients and stir into apple mixture. Add coconut and nuts. Bake in floured 8 or 9 inch pan at 325 degrees for 25 to 35 minutes. Mix together topping ingredients. Spread on hot cakes and broil until nicely browned. Watch closely it burns easily. |
