AUTUMN APPLE CAKE 
1 c. raisins
3 c. flour
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 c. vegetable oil
1 c. sugar
1 c. brown sugar
4 eggs
1 tsp. vanilla
3 c. chopped apples
1 c. chopped nuts

In a small bowl soak raisins in warm water to cover for 1 hour, drain. Sift together flour, baking soda, salt, cinnamon and nutmeg. In large bowl, beat oil and sugars until well blended, about 6 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla, then gradually beat in flour mixture. Fold in raisins, apples and nuts. Preheat oven to 350 degrees. Spoon batter into grease 9 inch tube pan. Bake for 1 1/2 hours or until cake tester comes out clean. Remove from oven and cool in pan. Serves 16.
