CRUMB - TOP BANANA CAKE OR BARS 
1/2 c. shortening or butter
1 1/2 c. sugar
2 eggs, well beaten
1 c. banana pulp (3 med.)
1 tsp. vanilla
1/3 c. milk
2 tbsp. vinegar
1 tsp. baking soda
1/2 tsp. salt
2 c. flour

Cream shortening and sugar. Add eggs and vanilla, beating until fluffy. Beat in banana pulp. Add flour and salt alternating with vinegar-soda-milk mixture. Beat well. Pour into baking pan, sprinkle topping over batter. Bake in 9 x 13 inch pan for cake or 11 x 16 inch for bars. Grease and flour the pan.

TOPPING:

1 c. crushed crispy rice cereal or corn flakes
1 c. brown sugar
1/2 c. flour
2/3 c. butter
1 c. milk
1 c. coconut

Mix first 3 ingredients, then add softened butter and mix until crumbles. Sprinkle evenly on top of batter. Bake at 350 degrees for 40 minutes.

Wow, this tastes great. I made it as a bar in my largest pyrex dish. It makes heaps. If you make as a cake you'll need a big tin. The 1 cup of milk and coconut listed in the topping section was a bit of a puzzle. The recipe does not say what to do with it. I added the coconut to the first 3 topping ingredients and skipped the milk. I lightly pressed the topping into the batter. The result is a terrific crumble that crisps up upon cooling, with the soft cake underneath.
