APPLE OATMEAL MUFFINS 
1 c. flour, sifted
3 tsp. baking powder
1/2 tsp. salt
1/2 c. sugar
1/4 c. brown sugar
1 c. old fashioned oatmeal
1 c. chopped apples, pared
1 egg
1/2 c. milk
1 tsp. cinnamon
1/2 - 1 c. golden raisins (opt.)
1/2 - 1 c. walnuts (opt.)

TOPPING:

1/4 tsp. cinnamon
1 tbsp. sugar

Preheat oven to 425 degrees. Sift flour, baking powder, salt and cinnamon together. Beat egg and milk together; add to flour mixture. Add remaining ingredients except topping. Spoon into greased muffin tins. Prepare topping and sprinkle on muffins before baking. Bake for 15 to 20 minutes. Yield: 12 muffins.

Really good and hearty. I made the following changes, Used buttermilk instead, 3/4 cup instead of 1/2. Added 1/4 cup oil. 2 teaspoons baking powder and 1/2 teaspoon baking soda. Also 1/2 teaspoon ginger and nutmeg. And half whole wheat and white flour. Yummy!

These are good and 4 year old approved. They are very sweet though. I would use less white sugar next time-maybe just a 1/4 cup. I like that they have a chewy, hearty consistency.

Two slight changes: I added 1/2 cup melted butter, and 1/4 coconut. Family said they were best muffins ever. Didn´t bother with the topping.

Just made apple oatmeal muffins for first time. I did add a splash more milk, but otherwise followed recipe. Husband doesn't eat oatmeal but loved these! Found a new favorite! Thanks.

I found it needed some moisture too so i added a half cup melted marg. They turned out great but i think half a cup of milk wasnt enough to keep it from being too thick.

Turned out really good! Not too dry at all! The apples are going to release moisture also and I used 1 1/2 cups chopped apples. Changed the topping to butter, brown sugar and cinnamon.

Batter seemed very thick. I thinned it just a bit with a little more milk. Muffins are baking as we speak, I will come back and let you know what I think as soon as I've taste tested them... :)
