APPLE OATMEAL MUFFINS 
1 1/4 c. whole wheat flour
1 c. old fashioned oatmeal
2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2-1 tsp. cinnamon

Combine and mix until well blended. Stir together and add to dry mixture: 1/2 c. skim milk 1/4 c. safflower oil 1/3 c. honey 2 c. shredded apple

Bake in muffin tins at 350 degrees for 20 minutes. Yield: 12 to 15 muffins, about 190 calories, 5 grams fat.

This was GREAT!! So healthy - and I used steel cut oats, and it still turned out fab! I also added about one tablespoon of brown sugar just to make them a little more decadent.

so, because I dont own a muffin tin. i turned it into an apple oatmeal bake with slices of apples on top & drizzled with honey. SOOOOOOOO good :)
