APPLE GINGER COBBLER 
TOPPING:

1 1/4 cups all-purpose flour
1/2 cup sugar
2 tbsp. baking powder
1/8 tsp. salt
1 tbsp. melted butter (unsalted)
2/3 cup milk

Mix all the dry ingredients and sift them, then add wet ingredients, until the mixture is like a thick pancake batter. Set aside.

FRUIT MIXTURE:

3 lb. apples (your choice), cored and sliced thick
1/4 cup fresh chopped ginger (about 4 tbsp.)
1/2 cup sugar
2 tbsp. lemon juice
3 tbsp. all-purpose flour

Preheat oven to 400°F.

Add all the ingredients and mix well. Be gentle so you don't break the apples up too much.

Place apple mixture in a semi-large baking pan then put dollops of the topping in like six different spots leaving holes for ventilation. Sprinkle some sugar on top.

Bake at 400°F for about 30 minutes or until golden brown. Serve warm with some vanilla ice cream on top.

Tip: The edge of a tablespoon may be used to peel the fresh ginger.
