HOT CHICKEN SALAD 
PART I:

2 c. cooked chicken (2 full breast)
2 c. celery, chopped medium
1/2 c. toasted slivered almonds (extra for top)
1 c. mayonnaise
2 tsp. lemon juice
2 tsp. grated onion or minced onion

PART II:

1/3 c. grated Cheddar cheese
1 c. crushed potato chips

Combine all ingredients number I. Put into greased casserole. Put 1 cup crushed chips and 1/3 cup grated cheese on top. Add a few extra almonds. Bake uncovered at 400 degrees for 20 minutes.

NOTE: This is supposed to serve 6, but generally does not if there are any hearty eaters. I find that the chicken has the best flavor if boiled with celery leaves, onion and a couple of peppercorns if you are cooking it for this dish.
