JUMBO BANANA-CHOCOLATE CHIP
MUFFINS
 
1 c. butter, softened
3/4 c. brown sugar
3 c. mashed bananas
1/2 c. milk
4 large eggs
1 tsp. vanilla extract
3 c. all-purpose flour
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1 c. chopped pecans
1 c. chocolate chip morsels
additional chocolate morsels, melted (optional)

Beat butter at medium speed with an electric mixer until creamy. Gradually add sugar, beating well. Add mashed bananas and next 3 ingredients, beating until well blended. Combine flour and next 3 ingredients; add to butter mixture, stirring just until blended. Stir in pecans and 1 cup chocolate morsels. Spoon into greased jumbo muffin pans, filling 1/2 full.

Bake at 375°F for 25 minutes or until a wooden pick inserted in center of muffin comes out clean. Cool in pan 5 minutes. Remove from pan immediately and let cool completely on a wire rack. Drizzle with melted chocolate morsels if desired.

Yield: 1 1/2 dozen.
