MYSTERY PIE 
25 crushed Ritz crackers
1/2 c. sugar
1 c. chopped pecans
3 egg whites
1/2 c. sugar
1 tsp. vanilla
1 c. whipping cream (may sub. Cool Whip)

Crush Ritz crackers; add 1/2 cup sugar and chopped pecans. Beat egg whites until stiff; add 1/2 cup sugar and vanilla. Beat. Fold in egg whites to cracker mixture. Pour into heavily buttered 9 inch pie pan. Bake at 325 degrees for 30-35 minutes. Cool. Serve with whipped cream. (May substitute Cool Whip.) Garnish with fruit if desired. Keep chilled until serving time. Variation: 1/2 can coconut and 1/4 can candied cherries may be folded in with the nuts.
