OATMEAL BRAN MUFFINS | |
1 3/4 c. oat bran 3/4 c. old fashioned oats 1/2 tsp. salt (opt.) 1/2 tsp. nutmeg 1 tsp. cinnamon 2 tsp. baking powder 1/2 c. brown sugar 1/3 c. honey 2 tbsp. Puritan oil 3/4 c. skim milk 4 oz. egg beaters 1 tsp. vanilla 1/4 c. raisins Preheat oven to 425 degrees. Combine all dry ingredients. Mix well. Mix together other ingredients and pour into dry ingredients. Mix well. Fill lightly greased muffin tins 2/3 full. Bake for 15 to 17 minutes. Makes 12 muffins. NOTE: Can use 2 teaspoons of cinnamon instead of 1/2 teaspoon of nutmeg and 1 teaspoon cinnamon. For fewer calories, substitute Sweet 'n Low brown sugar for the brown sugar. You may use chopped nuts or blueberries instead of raisins. If using dried raisins, remember to soak them in warm water while you're mixing the muffins.
