OATMEAL - OAT BRAN MUFFINS 
1 c. oatmeal
1 c. oat bran
Sprinkle cinnamon
1-1 1/2 c. applesauce
(1/3 calories of sugar)
2 tsp. baking powder
1/2 tsp. salt, optional
1 c. skim or 2% lowfat milk
1/2 c. raisins or nuts
2 egg whites
2 tbsp. olive oil or vegetable oil

Heat oven to 375 degrees. Line 12 muffin cups with paper muffin cups. Combine ingredients. Fill prepared muffin cups almost full. Bake 18-20 minutes.

I have not tested this recipe but it's very similar to mine. I think this a great recipe because it does not call for flour and so this makes it a true unprocessed bran muffin. I actually substitute the sugar with agave nectar because the latter has a lower glycemic index. In addition to the oatmeal and oat bran, I use wheat bran for added fiber. I also add reduced fat or regular organic coconut flakes which makes it even tastier. I also use almond milk instead of dairy milk. I like the idea of using apple sauce and I will try this too.
