OATMEAL MUFFINS 
1 c. quick oatmeal
1 c. buttermilk
1 c. sifted flour
1/2 tsp. salt
1/2 c. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1 egg, beaten
1/2 c. melted shortening

Add oatmeal to buttermilk in a bowl and let stand one hour. Sift the flour once, measure and resift with the baking powder, soda and salt. Add egg to the oatmeal-buttermilk mixture and beat well. Add sugar and melted shortening, and again beat well. Add dry ingredients and stir only until moistened. Fill greased muffin tins not more than two thirds full, and bake in a 400 degree oven for 15 to 20 minutes or until done. Makes 12 muffins.
