HUCKLEBERRY MUFFINS 
1 c. sugar
1 c. milk
1/2 c. shortening
4 tsp. baking powder
2 c. huckleberries (which have been coated in flour)
1/4 c. oil
1/2 tsp. salt
2 eggs
2 2/3 c. flour

Mix all ingredients, except berries, and stir well. Add flour coated berries. Gently stir into mixture. Fill greased muffin tins or papers in muffin pan 3/4 full. Sprinkle some sugar on top and bake at 375 degrees for 15-20 minutes.

Great simple recipe! I thought I had more huckleberries but at closer inspection (taste lol) I realized there were multiple bags of black currants in the freezer from last year's berry crop. Whoops! I had the batter all made and put in the black currants and what a surprise! Great muffins! Beautiful color and perfect texture! I baked them for 18 minutes at 375°F in a preheated oven. Thank you!
