2 lb. potatoes (about 6 med.) boiled
1 egg
1/2 c. finely chopped onion
2 cloves finely chopped garlic
3 tbsp. flour
1 tsp. salt
1/4 c. butter

Shred potatoes to equal 4 cups. Beat egg in bowl. Mix potatoes, onion, garlic, flour and salt. Heat butter in large skillet over low heat until melted. Shape potato mixture into 8 patties; place in skillet. Cook over medium heat, turning once, until golden brown, about 5 minutes.
