STIR AND BAKE WHITE YEAST BREAD
1 pkg. active dry yeast
1 1/4 cups lukewarm warm water
2 tbsp. sugar
1 tsp. salt
3 tbsp. soft shortening
3 cups sifted flour

This is a batter bread. It can also be made in a bread machine using bread machine or quick-rise yeast. Dissolve yeast in water until well blended. Add sugar and oil, softened butter or shortening. Mix well.

Add one cup of flour; mix until fairly smooth. Beat batter with mixer. Add second cup of flour mixed with salt. Beat well. Add third cup; mix.

Place dough in a well greased bowl, turning dough around to grease all sides; cover and let rise in a warm place until double in size, about one hour or more (depends upon room temperature).

Punch down and shape into a large greased loaf pan. Let rise for another hour or until doubled.

Bake for 45 minutes in a preheated 350°F oven until internal temperature reaches about 195°F or until bread sounds hollow when tapped underneath.

Cooks Tips: It's best to use an instant thermometer to check the temperature of the liquids that you add to the yeast. If you are questioning your yeast (it may be old/inactive), dissolve it in 1/4 cup of 110°F water with a 1/2 teaspoon of sugar and let it sit for 5-10 minutes - if it doesn't foam up, discard the yeast and start again using fresh yeast. Also - never use tap water that has been chlorinated!
