CRUMPETS 
1 pint (2 cups) milk
1 teaspoon salt
about 3 cups flour
1/2 cup (1 stick) butter
1 pkg. yeast

Scald the milk and let it stand until luke warm, then add the salt and flour. Beat vigorously then add the butter, melted, and the yeast. Beat again. Cover and stand in a warm place until very light.

Grease muffin rings and place on a hot griddle. Fill each ring 1/2 full of the batter. Bake until brown on one side, then turn and brown on the other. Remove from heat and set aside until wanted. When ready to use, toast on both sides, being careful not to burn. Butter nicely and serve on a hot plate.
