ROLLED REUBEN MEAT LOAF 
1 lb. ground beef
2 tbsp. prepared mustard
1 1/2 c. whole wheat, rye, or pumpernickel bread crumbs
1 egg, beaten
1/2 c. chopped onions

Mix beef, egg, mustard, onion, and bread crumbs. On waxed paper, pat mixture into a 12 inch square. Sprinkle on the square 1 (8 ounce) can sauerkraut (drained), 1/2 cup shredded Swiss cheese, and 1 teaspoon caraway seeds. Roll loaf jelly roll fashion. Place loaf on a microwave meat or bacon rack. Cover with waxed paper and microwave on 70% (medium high) 9 minutes, rotating once. Sprinkle with 1/4 cup shredded Swiss cheese and let stand 5 minutes or more. Slices better the more it cools.

Since microwave ovens vary in power, you may need to adjust your cooking time.
