DOUBLE CHEESE MEAT ROLL 
1 1/2 lb. lean ground beef
1 egg
3/4 c. cracker crumbs
1/2 c. finely chopped onion
2 (8 oz.) cans tomato sauce with cheese
1 tsp. salt
1/2 tsp. oregano
1/8 tsp. pepper
2 c. shredded mozzarella or Cheddar cheese

Combine beef, egg, crumbs, onion, 1/3 cup sauce, salt, oregano and pepper. Mix well and shape into flat rectangle about 10 x 12 inches on wax paper. Sprinkle cheese over mixture and roll up and press ends of roll to seal. Bake 1 hour at 350 degrees. Drain excess fat. Pour remaining sauce over roll and bake another 15 minutes. Makes 4-6 servings.
