ROLLED RUEBEN MEATLOAF 
1 lb. ground beef
2 tbsp. mustard
1 egg, beaten
1/2 c. bread crumbs
1/2 c. green onions, chopped

Mix above ingredients together and roll out between two sheets of wax paper until about 12 inches square. Remove top sheet of wax paper. 1 1/2 tsp. caraway seeds 1/2 c. Swiss cheese, shredded

Layer sauerkraut, caraway seeds, and 3/4 of cheese in the middle of the meat mixture. Roll jelly-roll fashion, using the bottom sheet of wax paper for assistance, removing wax paper as rolled. Place on a microwave rack and cover with wax paper. Cook 9 minutes at 70 percent power, turning once. Sprinkle with remaining cheese and let stand for 5 minutes before serving. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
