MOZZARELLA MEAT LOAF ROLL 
1 1/2 lb. lean ground beef
1/2 c. dry bread crumbs
1 egg, slightly beaten
1 tsp. instant minced onion
3/4 tsp. salt
1/2 tsp. oregano
15 oz. can tomato sauce, divided
1 1/2 c. shredded Mozzarella
4 oz. can mushroom pieces

Combine beef, crumbs, egg and seasonings. Add 3/4 cup tomato sauce. Cut a piece of waxed paper about 15" long. Press meat mixture into 9x13" rectangle on paper. Sprinkle meat with cheese. Top cheese with mushrooms. Starting with narrow end of meat, lift waxed paper to help roll meat "jelly roll" fashion. Place seam side down in greased 8x12x2" pan. Bake at 375 degrees for 30 minutes. Use a meat baster to remove excess drippings from pan. Pour remaining tomato sauce over meat loaf. Bake an additional 30 minutes. Yield: 8 servings.
