POTATO MEAT LOAF ROLL 
1 1/2 lbs. ground beef
1/2 c. dry bread crumbs
1/4 c. finely chopped onion
1/2 c. milk
1 tsp. salt
1/4 tsp. pepper
1 egg, slightly beaten
Potato Buds mashed potatoes (enough for 4-5 servings)
1 egg, slightly beaten
1/2 c. catsup
1 tbsp. brown sugar
2 slices American cheese

Mix beef, bread, onion, milk, salt, pepper and egg. Shape into rectangle 12x9 inch on waxed paper.

Prepare mashed potatoes as directed on package for 4 servings except decrease water to 1 cup. Stir in 1 egg. Spread potatoes on beef mixture to within 1 inch of edges. Roll up rectangle carefully and tightly, beginning at 12 inch side and using waxed paper to lift. Press edge and ends of roll to seal. Place roll, seam side down in ungreased 12x7x2 inch baking pan. Bake 1 hour.

Mix catsup, brown sugar, spread over loaf. Bake 15 minutes. Garnish with 2 slices American cheese, each cut 3x3 inch diagonally into halves. Let stand 10 minutes. 6 servings.
