ROLLED MEAT LOAF WITH ZESTY
TOPPING
 
2 lbs. ground beef
1 med. onion, chopped
2 cloves garlic, minced
2/3 c. bread crumbs
3/4 c. milk
2 eggs, beaten
1/8 tsp. curry powder
1/4 c. catsup
1 tsp. Italian seasoning
2 tsp. salt
1 tsp. black pepper
1 1/2 c. grated cheddar cheese
3/4 c. chopped green pepper
10 med. mushrooms, chopped

Pour milk over crumbs. Let stand until soft. Mix beef, onion, garlic, eggs, catsup, and spices. Pat out on wax paper to about 1/2 inch thickness. Mix mushrooms, pepper and cheese. Spread over meat.

Roll up jelly roll fashion. Place in 9x13 casserole dish, seam side down. Spread with Zesty Topping. Bake 1 1/2 hours at 300 degrees. Let set 10 minutes before serving.

ZESTY TOPPING:

1/2 c. Heinz 57 Sauce
6 tbsp. packed brown sugar
4 tbsp. mustard

Mix thoroughly before spreading on meat loaf.
