STUFFED ROLLED MEAT LOAF 
1 lb. ground hamburger
1/2 lb. ground pork
1/4 c. saltine crackers, crushed
1 egg
1/2 c. milk
1/2 tsp. salt
1/2 tsp. thyme
1/4 tsp. pepper
1 c. onion, chopped
1 (16 oz.) can apricot halves, drained, juice reserved
1/2 c. fresh parsley, chopped

In large mixing bowl, blend ground hamburger, pork, crackers, milk, salt, thyme and pepper. Mix until well blended. Moisten a piece of waxed paper, 18 inches long. Pat meat mixture to make a rectangle 9 x 12 inches. Spread onions over the top of the meat evenly. Coarsely chop the drained apricots. Sprinkle over onions. Sprinkle parsley over all.

Roll as for a jelly roll, starting with a 9 inch side, making a compact roll. Simply lift up the waxed paper to start the meat rolling. Place the meat roll in a lightly greased 9 x 5 inch bread pan.

Bake at 350 degrees for 50 minutes. Meanwhile, boil juice down from the canned apricots to measure 1/4 cup. Brush the meat loaf halfway through baking with this juice. Allow to stand for 10 minutes before serving.

You may substitute apricot halves with soaked prunes. For 8 servings, double the ingredients, but use only 1 1/2 cans apricot halves.
