BREAD MACHINE CINNAMON BUNS
Dough:

1 cup milk
1 egg; beaten
4 tablespoons melted butter
4 tablespoons warm water
1/2 (3.5 ounce) package vanilla instant pudding
4 cups bread flour
1 tablespoon white sugar
1/2 teaspoon salt
1 tablespoon active dry yeast

Filling:

1/2 cup butter, softened)
1/2 cup brown sugar, packed
1/2 cup white sugar
1 tablespoon gound cinnamon
1/4 cup chopped walnuts or pecans (optional)
1/4 cup raisins (plumped) and also (optional)

Frosting:

1 teaspoon milk
1 1/2 cups confectioners sugar
4 tablespoons butter, softened
1 teaspoon vanilla flavoring

Set bread machine on the DOUGH cycle, place the ingredients for "dough" in the order listed. Allow your machine to complete the dough cycle. In the mean time, prepare your filling mix, except for the plumped raisins, and set aside.

When finished, remove the dough onto a floured surface and knead slightly. Then roll dough into a large rectangle. Spread with the butter mentioned in the "filling" ingredients.

Sprinkle with your prepared filling mixture. If adding the plumped raisins, do it now and evenly sprinkle them over the prepared filling mixture.

Roll the dough into a log. Cut into 12 equal pieces.

Place in a prepared 13 x 9 inch baking pan. Cover with plastic wrap; place in a warm area to rise. When rolls have reached the top of the pan, place in a prepared 350 degree F. oven (175 degrees C.) and bake for 15 - 20 minutes.

When done, remove from oven and place on wire rack to cool.

Mix frosting ingredients as listed in a small bowl. Spread over warm buns.

These are the most like "bakery" cinnamon buns that I have ever made or tasted! And so easy with your bread machine too! Hope you enjoy them as much as we do!

Very easy, came out perfect. I didn't have pudding mix so I made without it. They were so good. I used a cream cheese frosting instead. Next time I will use pudding. I love letting my bread mixer do all the work. This will be my go to holiday breakfast. I'm trying to create traditions for my family ad this will be one of those. Thank you. I've tried many and failed.

This is by far the best recipe for cinnamon buns I have used to date, I will not be hunting anymore. Needless to day they did not last very long in my house and I had to make another batch so I could get one.

These rolls came out fabulous!!!! The bun itself has the most incredible rich texture - I am guessing from the vanilla pudding mix - I followed this recipe exactly and they came out beautiful and scrumptious!!!! I did end up with 16 buns... I probably could have cut them bigger to have baked a smaller amount... but I'm NOT complaining!!!!

This is a FANTASTIC recipe! My family likes a stronger cinnamon flavor, so I add 1 tablespoon natural cinnamon oil (for COOKING, not essential oil for potpourri; do not confuse!) For folks who find this recipe too sweet, reduce the amount of sugar in the filling to 1/2 - 3/4 cup; I use 3/4 cup brown sugar only. I also blend all of the filling ingredients together and spread the filling over the dough, instead of trying to sprinkle the sugar evenly over the buttered dough.

For convenience--and to avoid having to get up at 5 a.m. to make these rolls for breakfast!--I make this dough the night before, and chill it, wrapped first in plastic wrap, then placed in a ziploc bag.

My family insists that I use only this recipe when we get the hankering for cinnamon rolls, and after trying a slew of different cinnamon roll recipes, I agree!

These are fantastic! Enjoying one right now hot out of the oven. Best I've ever had, including the ones that tempt you at airports. Simple and quick to make but you do need to account for the rising time. Mine rose about 2 hrs and they are light as a feather. Highly recommended!

I made these with spelt flour and they were delicious. None of my family could tell they were made with spelt. My nephew, a big Tim Horten cinnamon bun fanatic absolutely loved these. I made a cream cheese glaze for them that added to the yumminess.

Comment about the pudding mix (Colorado) says:
To people who want to leave out the pudding mix to make the rolls less sweet: do not leave out the pudding! The modified food starch and dry milk in the pudding are what make this dough so soft.

If the rolls are too sweet, decide whether it's the dough itself or the icing. If it's the dough, reduce the amount of sugar by about 1/4.

If it's the icing, use a cream cheese frosting on these rolls. Here's recipe I made up for these cinnamon rolls:

CINNAMON ROLL CREAM CHEESE FROSTING

8 oz. (1 pkg) cream cheese, softened
1/4 cup butter, softened
1 tbsp. milk
2 tsp. vanilla extract
3 cups powdered sugar
1/8 tsp. to 1/4 tsp. lemon juice, to taste (to accent the mild tanginess of the cheese; frosting should taste tangy, but not lemony)

Blend cream cheese and butter; add milk and vanilla. Gradually blend in powdered sugar, scraping bowl as needed. Add lemon juice a few drops at a time to accent tanginess of the cream cheese (taste before adding more lemon juice).

I absolutely LOVE this recipe! These have got to be the best and easiest cinnamon buns ever! I only had to modify it a little bit being so high in altitude in calgary alberta. I make them and take them in as treats for my co workers and the buns always disappear in seconds. Love it! Thanks for posting this incredible recipe!

I tried this recipe, and was simple enough but was way too sweet, if I fix again I will leave the pudding out. Also it made 18 not 12. I believe I could have halved the dough and spreaded out thinner and the rolls would have been better, just too sweet for me and family. I make homemade cinnamon rolls without the machine and never put pudding in there at all. Needs a little changing around before I do again. Now I love the idea of letting the machine do most of the work. but otherwise I need to make changes.
