AUNT CORA'S JUMBO RAISIN COOKIES 
2 c. raisins
1 c. water
3 1/2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1 c. shortening
1 3/4 c. sugar
2 eggs, slightly beaten
1 tsp. vanilla
1/2 c. chopped nuts (walnuts)

Place raisins and water in a saucepan; bring to a boil and boil about 3 minutes. Set aside to cool; do not drain. Mix flour with baking powder, soda, salt and spices. Cream shortening. Gradually add sugar, beating well after each addition. Beat in eggs.

Stir in the raisins with liquid; add vanilla. Gradually add the flour mixture, blending thoroughly after each addition. Stir in nuts. Drop from tablespoon about 2 inches apart on greased baking sheets. Bake at 375 degrees for 12-15 minutes. Makes about 2 1/2 dozen.

My husband has been making this cookie for Christmas for over 20yrs and we don't remember where we got the recipe from.This morning he is in a panic because his recipe card is so faded he can't see how much flour to use - so I did a search and here it is! I found this recipe in the Oakland Press newspaper in the 70's and it became a favorite for my mother. She loved these cookies and asked for them often. I finally gave her the recipe to make them, she made them often. Over the years I've moved and lost many recipes. I am so thrilled to have found the exact recipe on here. This site is wonderful! Great cookie.. and happy to be able to make them again.
