OATMEAL CAKE 
1 1/4 c. boiling water
1 c. quick-cooking oats
1/2 c. (1 stick) butter
1 c. white sugar
1 c. brown sugar
2 whole eggs
1 tsp. vanilla
1/2 tsp. cinnamon
1 1/2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt

Pour water over oats and let stand 20 minutes or longer. Cream butter and sugars. Add eggs and flavoring. Mix well. Add oats, then add dry ingredients. Bake 30 minutes at 350°F and put on the topping while cake is hot.

Topping:

3 tbsp. butter, melted
2/3 c. brown sugar
2 egg yolks, beaten
4 tbsp. cream
1 c. flaked coconut or chopped nuts

Mix. Spread on hot cake and broil 10 minutes or until top is slightly brown. Watch closely or it will burn.
