UNUSUALLY DELICIOUS IRISH
OATMEAL CAKE
 
1 1/4 c. boiling water
1 c. rolled oats (old fashion or quick)
1 stick (1/4 lb.) butter
1 c. brown sugar
1 c. white sugar
2 eggs
1 1/3 c. flour
1/2 tsp. salt
1/2 tsp. nutmeg
1 tsp. cinnamon
1 tsp. baking soda

Sift together flour, salt, nutmeg, cinnamon, and baking soda. Pour boiling water over oats. Add butter, let stand for 20 minutes. Add sugars, beat in eggs, add sifted ingredients to oat mixture and blend well. Bake at 350 degrees for 35 minutes in greased and floured 9x13 inch or 10x15 inch jelly roll pan. Top with topping, recipe follows.

TOPPING FOR OATMEAL CAKE:

6 tbsp. butter
1/2 c. white sugar
1/2 c. brown sugar
1/4 c. evaporated milk
1 c. coconut
1 c. chopped nuts
1 tsp. vanilla extract

As cake bakes, melt butter with sugars in small skillet. Stir until completely dissolved. Add rest of ingredients. Stir together and spread over warm cake. Place under broiler for a few minutes until bubbly and starts to brown; watch carefully so it doesn't burn.
