IRISH POTATO CAKE 
2 c. sugar
2 eggs
1/2 c. butter
1 c. cooked mashed potatoes
1 c. English walnuts
1 c. raisins
4 tbsp. cocoa
1 tsp. cinnamon
1 tsp. allspice
1 tsp. nutmeg
1/2 c. sweet milk
1 1/2 tsp. baking powder
2 c. flour

Mix and pour into 2 cake pans.

Bake at 350°F.

Filling:

1 1/2 c. sugar
pinch baking soda
3/4 c. milk
1 tsp. vanilla
1/2 stick butter
1 fresh coconut

Peel and shred fresh coconut and set aside. Mix all together and cook on medium to low heat. After syrup has cooked a few minutes, add fresh coconut and cook a few minutes longer. Spread over cake.
