BAKED BARLEY AND MUSHROOMS | |
1 med. onion, chopped 1/2 lb. mushrooms, sliced 1 c. barley 5 tbsp. butter 2 1/2 c. vegetable broth, boiling Salt & pepper to taste Preheat oven to 350 degrees. In a large skillet, saute onion, mushrooms, barley and seasoning in butter. Stir frequently until barley is lightly browned. Place in a 2 quart casserole and stir in broth. Cover and bake for approximately 1 hour. If barley is too firm when all liquid is absorbed add additional boiling water. |
