MY MOM'S ZUCCHINI CASSEROLE 
3 lb. zucchini, cut into 1-inch pieces
1/2 c. chopped onion
1 can cream of mushroom soup
1 c. sour cream
1 c. grated carrots
1 c. grated cheddar cheese
1 (6 oz.) pkg. chicken flavored stuffing mix

Cook zucchini and onion in water to cover in saucepan for 5 minutes; drain. Mix soup, sour cream, carrots and cheese in bowl. Fold in zucchini and onion. Mix dry stuffing mix with seasoning packet. Reserve 3/4 cup stuffing mix.

Sprinkle remaining stuffing mix in greased 9x13 baking pan. Spoon zucchini mixture over top. Sprinkle with reserved stuffing mix. Bake at 350 degrees for 1 hour. Yield: 12 servings.
