SQUASH CASSEROLE 
1 pkg. chicken flavored stuffing mix
1/2 c. melted butter
6 c. sliced zucchini-summer squash
1 c. sour cream
1/4 c. chopped onion
1 can cream of mushroom soup
1 c. grated carrots

Mix stuffing mix with seasoning packet and butter. Spread 1/2 of mixture over bottom of 8 x 11 inch dish. Bring onion and zucchini to a boil. Cook 5 minutes and drain. Mix sour cream, soup and grated carrots with squash. Pour over crumbs. Top with the rest of the stuffing crumbs. Bake at 350 degrees for 25-30 minutes. Serves 10.
