ZUCCHINI - SQUASH CASSEROLE 
6 c. cubes zucchini or summer squash
1 (8 oz.) pkg. stuffing mix
1/2 c. chopped onion
1 can cream of chicken or mushroom soup
1 c. (8 oz.) sour cream
1 c. shredded carrots
1/2 c. melted butter

Boil squash and onions together for 5 minutes, drain. Combine soup, sour cream and carrots. Fold in squash mixture. Combine butter and stuffing, and set aside.

Layer ingredients starting with stuffing and ending with stuffing. Bake at 350 degrees for 30 minutes.
