ZUCCHINI CASSEROLE 
6 c. zucchini (may use some yellow squash)
1/2 c. onion, diced
1/2 c. butter
1 can cream of mushroom, chicken or celery soup
1 c. sour cream
1 c. carrots, shredded
1 (6 oz.) pkg. Stove Top stuffing (chicken flavor) (prepare as pkg. indicates)

Boil zucchini and onion together 5 minutes and drain. Mix butter with zucchini. Mix all ingredients, bake at 350 degrees for 45 minutes.
