ZUCCHINI CASSEROLE 
6 c. uncooked zucchini (chopped with skin left on) blanch & drain really well
1/2 c. onion, chopped
1 c. sour cream
1 can cream of mushroom or cream of chicken soup
1 c. shredded carrots

Mix onion, sour cream, soup and carrots together and add to drained zucchini. Mix 1 package Stove Top stuffing mix (crumbs and seasoning mix with 1/2 stick softened butter).

Spray casserole dish with Pam, then put 1/2 of crumbs mixture and save the rest for the top. Bake at 350 degrees for 30 minutes. This is flexible. Just put it in the oven with whatever wise you have. Sometimes we use it for a meal by adding a layer of tuna, or cooked ground beef or ham.
